Could this split the stereo from Saramonic uwmic into two separate mono channels, then into my Zoom H6?
This Sescom Y cable #SES-IPSUMTS12IN will not work for the desired application because the wiring on the 1/8 TRRS is designed for a smartphone mic input and the 1/4 TS leads would force you to plug into the Zoom's line inputs bypassing the mic preamps. Theoretically, you could achieve separation of the two channels via the one stereo output if, and only if the Saramonic provides a true stereo output with each transmitter assigned to either the tip and the ring respectively. A special cable would have to be made featuring a locking TRS 1/8 male connector on one end, and two XLR male leads on the other.

Yes, that cable should be compatible for that application, provided the Zoom product has 1/4 jacks.
