How would this lens work on a Canon 80D for events such as graduations, weddings etc?

I have this lens and it produces crisp, sharp images. With your crop sensor camera the effective zoom range is equivalent to 112-336mm on a full frame camera, so you will need something shorter also. Indoors the f/4 maximum aperture might not provide enough light. If you can afford the extra money (and the substantial extra weight) Tamron's 70-200mm f/2.8 would offer more flexibility and creative control of depth of field. Both lenses are excellent.

How about the autofocus speed and accuracy? I'm a boxing and MMA shooter and concerned about AF speed.

This Tamron f/4 zoom is slower to focus than a Nikon f/4 70-200 and also slower than any f/2.8 lens. It might be acceptable for fast action indoors on a D500, since you can leave it on f/4 and get up to 10 FPS on continuous high. It would not be my choice for the type of photography you are doing.

received this lens today 11/25 and its firmware was version 1. I did buy the tap in module which I used to updated to version 2. My Nikon Z6 now works flawlessly in both photo and video mode.

Yes, the Tamron 70-210mm f/4 Di VC USD Lens for Canon EF would be compatible for use with the Canon Mount Adapter EF-EOS R and the Canon Control Ring Mount Adapter EF-EOS R. The lens has a Ultrasonic Silent Drive autofocus motor which would be quiet for video recording usage.
