Will this record the 32 mono channels coming in or just a stereo channel of the mix in the board?

This would allow for multi track when used with appropriate mixing board. The Board needs AES50 connection.

Will this convert 96k from my Midas to 48k so I can record 48ch at one time? Doesnt it take two aes50 cables to get 48 channels one way into something. My desk runs at 96k but Id be ok recording at 48k but Im guessing I would need a converter to go from 96k to 48k.

No, it will not convert to give you the full 48ch. I would suggest getting two and handling it that way, a converter will likely be larger and more expensive.
