Yes, it is possible, however, it requires a 4G modem that is capable of connecting to the camera via a network cable. This means its not compatible with a smartphones mobile hotspots. You can find more info in the manual in section 4.1.4

Only the SD card is required for live streaming via wifi or ethernet. To record, you need all six microSD cards + the SD card.

Is this camera water resistant? Not planning on submerging it, but will be shooting jet ski tours.
The Pro/Pro II camera have cooling vents on top and bottom. While you can disable the fan, that limits the recording length as there is a thermal shut off, so using a waterproof enclosure would cause the camera to overheat and shut down quickly.
That said, I mounted the Insta360 Pro II to a tripod on my car to document miles of dusty dirt roads for GSV and was surprised at how little dust got into the camera and on the lenses. Had used painters tape to seal the microSD ports, battery hatch, but that wasn't really necessary to keep dust out (but I recommend doing so to ensure you don't loose any microSD Cards).

Is there a minimum distance before the stitch becomes obvious? I'm looking at capturing small rooms.
The minimum distance for stitching is about 6ft.
