Is there a version of this cable without a locking connector?

No, we don't make one like that. But you can easily push back the locking connector and it does not impede the use at all. I use one with a Blink 500 and Blink 500 Pro system all the time.

Would this cable provide separate tracks out of the UwMic9, or will it be both channels mixed into both XLR’s?

I think it is not right what David is telling here? It is single output from the Saramonic RX9, but it is stereo output, and the XLRâs are mono so one is for right and one is for the left.
