I am not sure but as you need to synchronize the receiver with the emitter (mics) I guess they could work at the same time.

No on the Sony make sure you go into the audio settings and manually adjust mic sensitivity to like -6 ot -8

Your camera no doubt has a microphone input, so it will work. The challenge is whether it has a headphone jack so you can monitor sound levels for each mic. You can set the volume of the transmitters to half or three quarters and hope to adjust during editing. Is is much more difficult to do that way as you have to adjust volumes of separate voices. You have two mics and one receiver, recording in mono. If you have a soft voice and a louder voice it is much better to set recording levels using your headphones on the camera before you start recording.

Does the included cable for mirrorless cameras (specifically with the Sony a7 iii) output two separate channels, one per transmitter?
No. The separate audio channels are blended into a dual mono channel. It's the only negative I have with this setup. I've used various 2.4GHz mic models and considering this allows for the recording of two mics simultaneously, it's the best bang for the buck model on the market today.
