The combo of camera and lens is balanced on the swing arm with 4" of height adjustability on the Arca-type quick release assembly clamp. Sliding the mounted lens back and forth helps to further balance the lens on the head. This enables you to have a fluid and seamless swinging motion that otherwise you would have a difficult time achieving on your own. You can disengage the separate panning lock to gain a full 360° rotation. The base also has a numbered scale on the bottom. As a result, all these features make the 2.75 lb gimbal head ideal for sports and nature photographers.

I have an Olympus 100-400mm lens on order for over 30 days ... and B&H says that it is still waiting to receive their first shipment from Olympus ... so if you have an Olympus 100-400mm len ... you are very lucky. I am "assuming" that the 100-400mm lens will mount on the Movo GH800 ... that is my plan ... and since the Olympus 75-300mm mounts very well on the Movo GH800 ... and the 100-400mm lens is the same design ... just a larger size ... there should be no issues.

What is the distance from 1/4-20 thread to mount your camera (on center) to the side of the swing arm?

From the center of the 1/4"-20 mounting screw to the swing arm, it's 79.6mm / 3 1/8".

How well does this work shooting video with stabilization?

This gimbal is mostly designed for photo. It's not going to give you stabilization on all axis like a video gimbal would, especially if you plan on doing any kind of camera movements.

What is the advantage of this unit over the Movo GH-600 or the Smith-Victor GH-1? Is it worth the extra money? Bearings? Materials? Design?

I haven't used the other Gimbal heads so I can't speak to a specific advantage. For me the price was right, it works great supporting my 600mm Lens, and the height adjustment is there if you need it.
