The Canson Infinity Baryta Photographique II is slightly thinner than the original (11.9 vs 12.2mil) but other than that they are the same.

I would use this paper with an Epson printer. I understand that I should use the matte black instead of the photo black pigment ink. Is that correct?

After printing on this paper, do you use any kind ...

After printing on this paper, do you use any kind of finisher or sealant to protect the print? If it matters, I'll be using an Epson surecolor printer and manufacturer pigments.

I do not use anything after printing and have found no need to protect the print. However I use the Canon Pro-1000 printer with its recommended ink set. The set includes a chroma optimizer, a clear coating applied during printing. The purpose is not to protect the print but to even out the differences in glossiness of the various colors, to expand the color gamut, and to enhance the density of the blacks. The Canson paper and the Canon printer are a great combination and have become my standard.
