What "recording software" is required? Is audacity included?

No. Audacity is not inlcuded. Any audio sofware can play the files this will create. If you do not plan on doing any audio manipulation all you need is playback. Quicktime or iTunes would be fine for that.

The Audio Technica LP120 usb turntable does not come with any software included. What the manual suggest is that you can download any 3rd party software like Audacity which is a free software for both Mac and PC. hope this helps.

Does it come with a complete cartridge with a needle? Which country it is made in? China, US, Japan or another country? What cartridge would it need to play 78 RPM records?

For old 78RPM records, you will need a different cartridge and or stylus. If you want to change the whole cartridge, this would be the cartridge you would need for 78RPM records. (AT-VM95SP). If you would like to just change the stylus and use the same cartridge that came with the turntable, you would need this stylus to play old 78 RPM records. (AT-VMN95SP)

I use the Fluance Ai61 a new generation since 2021 (it work on Bluetooth, USB, RCA, OPTICAL) superb great sound. They also made the same power speaker but smaller Fluance Ai41 Fantastic sound.

When transferring audio in this manner, you will need to use a DAW (digital audio workstation - recording software) to record the files and determine the file type within the sofware's settings. The Audio-Technica Consumer AT-LP120XBT-USB Stereo Turntable with USB and Bluetooth can accept compatible cartridges from other brands.
