So if I use my 24-70 2.8 or my 70-200 2.8 VR lens on a LUMIX S5, the automatic features won’t work, or you can’t use those lenses at all?
You can use the lens as long as you meter in manual or aperture priority. No autofocus, though. In-body stabilization will work as long as you set the camera to the focal length you are using. Check the manual on how to do that.

The Metabones Lens Adapter for Nikon F-Mount, G-Type Lens to Leica L-Mount Adapter is a manual adapter without any automatic control. It will allow you to mount any Nikon F-mount lens including those made by Sigma. For focusing the lens will need to have mechanically coupled manual focus. For aperture control there would need to be mechanical coupling of the aperture as well, either with a dedicated aperture ring, or with a tab on the rear of the lens.
