Can Manfrotto 501 plates be used, or are there shorter Sachtler plates?

The Sachtler aktiv Slider to 75mm Tripod Adapter is not compatible with Manfrotto 501 style plates and Sachtler does not offer a smaller plate at this time.

Unfortunately no, Arca-Swiss is not compatible with Sachtler's sideload platform.

How long of a slider can I use with this adapter? ...

How long of a slider can I use with this adapter? I have the 40" Syrp Magic Carpet Slider. Will it stay level as I slide along the entire length of the slider?

You should be taking into account the weight of your camera setup and then checking which slider can appropriately hold your camera's weight. If you adhere to the slider's payload, you should be completely level from end to end when using the slider's entire length.
