You won't be able to transfer Windows programs to a Mac. If you have Adobe CC, you could simply download the Mac versions instead and they would run on the Mac.

It is too early to tell as many apps would need to be qualified as M1-native for a proper comparison. Currently, you cannot use an external GPU with M1-based Apple computers.

No. The memory is built into the M1 processor. No upgrade slots.

Just about any HDMI or USBC/Thunderbolt monitor will work with the M1. I bought a new monitor for mine and truly think it was a great purchase:

This is a high refresh rate 27" monitor with great sound - a first for me is a monitor with sound.
I bought my M1 as an interim step to replacing my 10 year old iMac, but I like it so much for what I do that I may not even buy a new iMac!
