I ordered this adapter to allow an HDMI input to my new soundbar from my older tv. Plug it into the tv and plug it into the HDMI end and it went to work and I had sound! Easy peasy.

Will this work connecting the optic side of the cable to the the Sonos soundbar and the HDMi to the TV?

The Sonos Optical Audio Adapter is designed to work only in one direction: from TV (optical out) → to Sonos Beam or Arc (HDMI in). It will not work the other way around.

Will this work to connect a CD player (optical output) to the HDMI on a soundbar?

The Sonos Optical Audio Adapter for Sonos Beam and Arc is made for proprietary compatibility with the Beam and Arc soundbars because of how those devices take audio through their HDMI connectors.
