Currently we have circular grommets that fit old microphone mounts. Will these new mounts fit our current grommet holes?

XLR inputs are a standard size so the grommets you have should fit into the circular holes. It is difficult to determine whether there may be any difference in the thickness of the plate on your old mic mounts to know whether or not the grommets you have will match the thickness of the plate on this mount. But there is a good chance that they can be a match.

Why does this require a 2" hole? It looks like only the circuit board extends below the desk surface.

Yes, a 2" hole is required to install the Audio-Technica Microphone Shock Mount Plate along with 4 small pilot holes to be able to screw it in place.
