How would this monitor work as a pro color monitor?
The Lenovo ThinkVision M15 62CAUAR1US 15.6" Portable Monitor features a limited color gamut that isn't ideal for color-sensitive work. For a similar portable monitor with a good color gamut for pro color work, I'd recommend the ASUS ZenScreen 16" 1600p 120 Hz Portable Monitor, B&H # ASMB16QHG, or the ViewSonic 15.6" VP16-OLED Thin Portable Monitor, B&H # VIVP16OLED.

Can I send an HDMI Signal converted to USB-C to this monitor?
The Lenovo ThinkVision M15 62CAUAR1US 15.6" Portable Monitor requires a genuine USB-C connection for video and power. USB-C can be adapted to HDMI, but not the other way around. Therefore, we do not recommend using a signal convertor as a means to send a video signal into the Lenovo ThinkVision M15 monitor, because the display will automatically output 5A of charging power to connected devices, which could be detrimental to a signal convertor. This display is meant to be connected directly to laptops or phones that can output a signal via USB-C. If you are looking for a portable display with an HDMI input, the ASUS ZenScreen GO MB16AHP 15.6" 16:9 Portable IPS Monitor (B&H # ASMB16AHP) would be a good alternative.
