Can the original probe lens be rotated as well? If I wanted to do a spinning/rotating shot with that as well.
The rotation of the Venus Optics LAOWA 24mm T14-40 Full Frame 2x PeriProbe Cine Lens refers to being able to rotate the lens barrel so the markings can be read. It does not rotate the image. To do that, you need to rotate the camera.

The Venus Optics LAOWA 24mm T14-40 Full Frame 2x PeriProbe Cine Lens (EF Mount) (B&H# VE2414PEF) includes both the periscope end and regular end of the lens. Pulling back or pushing forward on a lens collar allows them to be rotated.

What battery pack are you using for the lights? I wanted to use the white cable with a dimmer but it has a weird plug on it. One side is usb-c but the other is wider than regular usb. Not sure what it will fit. I tried looking online but no joy...

Yes, For the lens that you linked you would need an Canon EF to Sony E-Mount adapter. However Venus Optics makes an E-mount model of this lens that would work without an adapter on the Sony A7RV.

Can the Full Frame Laowa Probe be successfully used on APS-C or Micro 4/3 cameras such as Canon D90 and Lumix GH5? What is the effect on the image?
The Venus Optics LAOWA 24mm T14-40 Full Frame 2x PeriProbe Cine Lens (EF Mount) could be adapted to crop sensor cameras using a lens adapter. There will be additional magnification of the lens and it will not be as wide. On MFT is would be a 48mm lens and on APSC sensors it would be a 36mm view.
