I have an M6 with several lenses. Can I use these lenses on the M11 monochrome?
The pedantic answer is that there have been many lenses released for the M system since 1954, and not all of them are compatible or fully compatible on the M11. See page 33 of the M11 instructions, which is available for download from Leica's website.
In particular, Leica says that the M11 is not compatible with the Hologon 15mm f/8, Summicron 50mm f/2 "Dual Range" with close-up function, the Elmar 90mm f/4 with retractable tube (manufactured 1954-1968), or certain examples of the Summilux-M 35mm f/1.4 (non-aspherical, manufactured 1961-1995, made in Canada). So, subject to those exceptions: yes the lenses from your M6 will work.

Can you view subject in monochrome with the viewfinder eyepiece, as with Fuji XPro-3, or only with LED back screen?
Only with the LCD screen can you view the scene in monochrome since the M11's have optical viewfinders, not an EVF. You could also view your subject with the Leica Visoflex 2 attachment which could be a good option versus resorting to using the LCD back panel.
