To remove the foam windscreen from the Shure SM7dB Vocal Microphone with Built-In Preamp, squeeze the plastic ring on the bottom of the windscreen and twist it slightly from side to side while pulling it up and off of the microphone. It should be easy to remove.

No, the Shure SM7dB Vocal Microphone is not compatible for direct connection to the Canon EOS R5 C Mirrorless Camera. The mic requires phantom power, which the camera is unable to supply. However, you could use it with a separate phantom power supply or an XLR adapter/mixer like the TASCAM CA-XLR2d-C XLR Microphone Adapter Kit for Canon Cameras (B&H # TACAXLR2DC), the Beachtek DXA-MICRO-PRO Active XLR Compact Adapter (B&H # BEDXAMICROP), or the Saramonic SR-PAX1 Two-Channel Audio Mixer, Preamp, Microphone Adapter (B&H # SASRPAX1), which use a 3.5mm cable that will connect directly to the camera's mic input. The Shure SM7dB Vocal Microphone, and other similar dynamic broadcast mics, are useful for scenarios in which acoustic isolation is not possible - either because the recording space cannot be acoustically treated, or because several people must speak in close proximity. Large diaphragm condenser microphones like the Rode NT2-A are more sensitive, and provide excellent definition and clarity for situations in which background noise and flutter echo are not a problem.

I need a mic as a USB input to my computer workstation. Can the Shure X2u give enough gain for the SM7B or do I need this mic?

No, the Shure X2u XLR to USB Microphone Signal Adapter (B&H # SHX2UXLRUSB) will not supply enough gain for the Shure SM7B Vocal Microphone (B&H # SHSM7B), but a different USB audio interface with a higher input gain level of 60 dB or more definitely can. The Shure SM7dB Vocal Microphone with Built-In Preamp does have sufficient gain on its own, but it is an XLR microphone, so you would still need to use a USB audio interface for connection to your computer. As simple solution for direct connection to your computer via USB, you can use the Shure MV7+ Podcast XLR/USB Microphone (B&H # SHMV7PK), which has plenty of gain and can function as either a USB mic or it can connect via XLR.
