Each Kopul 4-Channel XLR Network Cable Extender only has a single RJ45 port, so they cannot be daisy chained.

Fixing the XLR gender being wrong with adapters, will these extenders pass audio in both directions on the Ethernet cable?

XLR is not de-facto a directional medium, which is to say that it's really just a set of three pins with copper wire in between. Audio can only flow one way from an XLR connector to another, but it doesn't actually matter which direction that is. So, if for some reason you have audio passing from male jack 1 of the Kopul 4-Channel XLR Network Cable Extender Kit to female jack 1, that will work fine. You just can't have audio flowing both ways at the same time between two connectors.
