Does everything come with to hold a roll of paper or do I need to purchase the roll adapters separately?
The Canon imagePROGRAF TM-340 36" Large Format Printer comes with everything you need to print on roll papers that have a 2" core. Since many roll papers come on a 3" core, I strongly recommend buying the 3" core adapter kit found here: https://bhpho.to/2rtzxPo.

The Canon imagePROGRAF TM-340 36" Large Format Printer can print on adhesive papers as long as the paper is inkjet compatible and 31.5 mil think or less. It would also be highly recommend to buy the 3 inch core adapter since many papers are only offered on 3 inch cores: https://bhpho.to/2rtzxPo

Will this print on foam poster boards? What thickness does this printer accommodate?
The Canon imagePROGRAF TM-340 can print on materials up to 31.5mil thick (0.8mm). So if your poster board is inkjet compatible and 0.8mm or less it will work.
