Does this dock require a "host" machine or can it just be attached via ethernet and its storage used as NAS?

Yes, the Sonnet Echo 13 Thunderbolt 5 SSD Dock (4TB) does require a host machine. It can connect to Windows, Mac or Chromebook computers.

Can I later replace the built-in SSD, if I decide years down the line I want to put in a bigger one?

The SSD on the Sonnet Echo 13 Thunderbolt 5 SSD Dock (1TB), B&H # SOECDK131TB5, is replaceable; however, Sonnet does not support this at this time. Replacing the drive would void the warranty.
