Can I use this card with my Sony FX2 to record in 4K XAVC-I at 60fps?

Yes, for FX2 recording mode XAVC S-I 4K 600Mbps, the ProGrade Digital 128 GB UHS-II SDXC Iridium Memory Card (2-Pack) V90 cards can be used, and you could also work with CFexpress type A cards. Sony says: CFexpress Type A memory card (VPG200 or higher) or SDXC V90 or higher for XAVC S-I 4K at 600Mbps recording formats.

Specifically regarding the 128GB SD card, is the max write speed 200 MB/s or 275 MB/s? Specs and image have different info.

Based on Progrades own website the Iridium 128gb model only goes up to 200. While the other sizes go up to 275.

Is this card capable of recording 120 FPS in 4K on the Sony a7sii? Is it capable of recording 8K video on the Sony a7rV?

Yes, the ProGrade Digital 256GB UHS-II SDXC Iridium Memory Card is capable of recording 4K 120 FPS and 8K video. For 8K video a CFexpress 4.0 Type A Memory Card is the preferred option as they have a higher minimum sustained write speed.
