If I wanted to use this on a BlackMagic 6K with it’s dual mini xlr ports how would I power the microphone? If the microphone was set to xy wide or xy narrow, would I enable 48v phantom power on both ports? Or would that overload the microphone?
Yes, you would enable phantom power on both mic inputs because the Sennheiser MKH 8018 Stereo Shotgun Microphone has 2 mic elements that require phantom power.

what shock mount and softie should i use with this?
For a basic shockmount to use with the Sennheiser MKH 8018 Stereo Shotgun Microphone, you can use the Auray DUSM-1 Universal Shockmount for Camera Shoes and Boompoles (B&H # AUDUSM1). A female 3/8" thread on the bottom of the shockmount enables attachment to a boompole or stand. For a compatible softie, you can use the Rycote Standard Hole Classic Softie Wind-Screen (5.9" Long, 0.7 to 0.8" Diameter Hole, Gray), B&H # RYS15M.
