My EF lenses are 20-35, 75-128 and 100-400 zoom; filter sizes are 72 and 77 mm, I assume must use 2 step-up rings 58-72 and 58-77 mm, will that work and what quality loss must I accept (loss of definition ,edge blur)?

Hi--this technique works best with a prime lens that's shorter than 50mm. The shorter the focal length, the greater the magnification. You can probably use those lenses in the way you describe, however.
