The Canon shade on a 300 f2.8 measures 5 3/8. Will this stretch enough?

I use it on a 500mm f4 prime with no problem. It is quite flexible.

Will the XL version of these work well with a Nikon 70-200 2.8 and 24-70 2.8? The large fits but requires 2 hands to take on and off as it is pretty snug.

Based on the tech specs that I found for both your lenses, 3.5" diameter, the large (fits a range from 4"-4.5") should be too big - if you’ve added any additional hardware to your gear (i.e. lens hoods, brackets, filters, longer lenses, etc.), it may affect the fit but this doesn't seem like what's happening here. If you measure the closed end of your current Hood Hat, if it is a Large it should be about 4.25" across. It sounds like your current Hood Hat may be a smaller size.
