Considering this stereo set and the single version. What I need it for is capturing audio from multiple speakers when I don't have enough inputs into my camera. Is the stereo version really necessary?
If you are okay recording in mono than just get one mic. If you want to record in stereo you will need the stereo set.

I have one 8020, if I want to get a pair, is it better to buy a pair or buy another one, i guess my question is, does the single version makes any difference with the pair version?
In terms of matching capsules, it is more ideal to purchase the Sennheiser MKH 8020 Compact Omnidirectional Condenser Microphone as a set, however purchasing two individual microphones will still provide great results when used as a pair.

Where would I find other 8000 series capsules to use on this model?
Sennheiser doesn't seem to be selling the capsules separately anymore. I tried several times through a couple different vendors and no one was able to get capsules only.

How do I connect a single or pair of these mics to a Sony A7VR or Sony equivalent camera?
The Sennheiser MKH 8020 Compact Omnidirectional Condenser Microphone require an XLR to XLR cable and 48V phantom power to function. The Sony a7R V Mirrorless Camera has a 3.5mm mic input as well as the Multi Interface Shoe. In order to connect and power either one or two of the MKH 8020 mics to the camera you will need to use a separate active XLR adapter/mixer or an external recorder. One of the best options is the Sony XLR-K3M Dual-Channel Digital XLR Audio Adapter Kit with Shotgun Microphone which connects to the camera using a cable-free digital connection through the Multi-Interface Shoe. Another option is the TASCAM CA-XLR2d-AN XLR Microphone Adapter Kit for Cameras (B&H # TACAXLR2DAN) which will connect through the camera's 3.5mm mic input. The Comica Audio CVM-AX3 Dual-Channel Audio Mixer for DSLRs (B&H # COCVMAX3) is a budget-friendly alternative that will also connect through the camera's 3.5mm mic input. The three adapters mentioned all have two channels with phantom power which will allow you to connect both mics at the same time.
