Would this paper be suitable for using as the cover of a soft cover book?

No, it is not thick enough and would crease relatively easy. As well, the ink would not stand up to the abrasion of usage over time. You could see about laminating it perhaps with some durable clear plastic, but I have no idea as to whether that would work!
