Is it good for acoustic wall panel cover? Is it too dense that may bounce sound back to the room?

All the inkjet canvases have a coating on them in order to absorb the ink properly. I believe this may be a factor to unbalance the acoustic panels. aside for that the canvas fabric itself can unbalance the accoustics.

Yes. I don't always do it if I am the one handling. It does scratch if you mis handle. If it just goes on a wall, not much of an issue
