Will this work with other phones - a Samsung Galaxy for example? Also, I just need a simple mic to go with it. Any recommendations?

I have used it successfully with my Samsung Galaxy Note 4. I actually use it as a back up telephone interface for live events so I always have it patched into an audio console and it has come in handy on more than one occasion when a hotel provided phone line has dropped out.

This cable blocks phantom power so it will not work for your application. Your best solution would be an audio interface.
