Does the hot shoe adapter detach so that it can be screwed into a bracket, like for a steadicam like the varavon birdycam?
The hot shoe is attached with a set screw so removing it is not easy. I would say no as it does not come apart easily.

is this product compatible with nikon d700?
Yes this product is compatible with the d700. It can be used on the top of the camera where that silver slider is.... this is called the shoe mount. Hope this helps.

is this product all metal? specifically I need the mount to not slip from my cold shoe mounts on my cage
It is indeed all metal, however, I use it on the cold shoe mount from my camera and I've never had a problem from slipping. Furthermore, I usually place a heavy Atomos Shogun and it holds just right. I would recommend this.
