Good color for back wall of small studio? I'm thinking of painting three sides black, and the back wall TV White (because I'd like a light gray wall to shoot on). Can't tell how gray the TV white is.

The paint can look a little grey to the eye, but is calibrated to look white on camera.

No, what you are looking for is screen goo. Also, the wall needs to be sanded and finished to a level exceeding typical specifications, so often a fixed frame screen is just as cost effective.

How would this work for the ceiling of a home theater? I assume it is very flat, not gloss.

This works excellent for your application. I painted about 10 feet of my ceiling and walls of my home theater around the projection screen. Amazing the difference between the Home Depot Flat Black and this product. It actually seems to absorb the light.

No, the Rosco TV Paint is not designed for use with blackening the edge of optical lenses, and cannot be removed by acetone.
