I purchased an 8860 several months ago & ...
I purchased an 8860 several months ago & absolutely *love* it, but haven’t yet had the opportunity to test the 80mm flat feet that were included. They are supposed to be for flat, slick floors, but I could see them also being helpful on craggy rock. Anyone try this?
Haven't used them yet. However, the idea is the more surface area in contact the better the "grip". If the surface is really craggy I'd try the standard feet first. You'll only know for sure once you try them.

Will using the 80" version of this tripod with only three of the four leg sections extended make it more rigid and stable than the 63" version with all four of its leg sections extended?
Your assumption is correct, the 80" is a better way to go.

I have a gimbal head whose base is 75mm and it fits the tripod perfectly. I shouldn't think you would need any sort of adapter.

How does the apex/spider differ between the 3 series and the 5 series? I see that the leg diameters increase, but is the mounting plate the same diameter and the distance from leg to leg around the apex the same? Just trying get a sense of how they differ dimensionally at the apex and whether there's additional rigidity and vibration damping benefits in the larger series beyond just increased tube diameters. Thanks!
The mounting plate and the distance from leg to leg on both the 5 series and the 3 series are the same, the additional rigidity and vibration damping benefits in the larger series are only due to the increased thickness of the legs as well as larger modular feet.

The product photos and video show the legs being used in water. But I don't see anything in the description that claims they are waterproof. Are these legs waterproof?
This tripod is not waterproof, however you can use it in water and then wash it clean with fresh water and dry completely before assembly.
