Would photo editing on this model, say, with Lightroom / Photoshop, Capture One, and/or Alien Skin Exposure be a total drag compared to either the 2018 13” or, particularly, 15” Macbook Pros?
The specs inside this computer are strong enough to work for Lightroom/Photoshop. But you would find a computer with a dedicated graphic card a much stronger option

Does this computer have a SD card slot and a place to plug in multiple USB drives?
The Apple 13.3" MacBook Air with Retina Display (Late 2018, Gold) B&H # APZ0VJMRE6BH does not have an SD card slot. It only has 2 x Thunderbolt 3 ports. You can plug in hard drives using a different cable or by using a hub like the Moshi B&H # MO99MO084213 which gives you an SD card reader, 2 x USB Type A ports and 1 x HDMI port.
