Can you disable the light and just use it as a master for an off camera light? In other words, no on camera flash.
it 100% is possible, I do it all the time. In Master mode, you can control three off camera groups independently of the Master flash itself, including setting the on-camera master not to fire at all.

No, the Godox v1 does offer a modeling light but its not suggested to use for video applications as the unit does not offer enough output.
