Will there be a parallax issue or an problem finding the nodal point using a 100-400mm lens?
The Acratech Panoramic Head with Leveling Base Kit could create parallax issues depending if there is an object close to the camera when you are stitching the image to a panorama. You may want to buy a nodal rail that would allow you to place the camera further back, with the center of the lens over the tripod's center. In that case there won't be any parallax.

Is this head compatible with the Wimberly Sidekick?
The Wimberley Arca Sidekick Ball to Gimbal Head Adapter is designed for use with ball heads, not panoramic tilt heads such as the Acratech Panoramic Head with Leveling Base Kit. While the Wimberley Sidekick would connect to the Acratech Panoramic Head, you may not get full range of motion using the panoramic head.
