Would the Slide or Slide Lite be best for the Nikon D500?

Both of these straps will more than support the D500 and are rated for 200lbs of gear. But the main difference is the lite is a bit slimmer. The wider strap is intended for heavier cameras but really it is personal preference.

The description says the anchors can hold up to 200 lbs, how much can the strap itself hold before breaking?

The specs list the load capacity of the strap as 200lbs. That would have to include both the anchors and the strap material because they are both single points of failure.

It does still have the rubber on it but they corrected this issue on the new ones. I have had my new one for 2 years now and haven't had any issues with the rubber rubbing off on my shirt.

Sure will! Just need a specific place to attach the Anchors to the camera. Doesn't require anything to be removed. Ideally, you'll use the stock split rings that come with the Fuji out of box.
