The Ubiquiti Dream Router 7 can be powered by POE AF 15w. You could work with the following switch that has 16 POE+ ports as one example. Of course, depending on the installation and the cameras, you may need a larger switch option. Ubiquiti UniFi 24-Port Gigabit PoE+ Compliant Managed Switch with SFP BH #UBUSW24POE - 16 x PoE+ Compliant Ports OR Ubiquiti UniFi Lite 16-Port Gigabit PoE+ Compliant Managed Switch BH #UBSLITE16POE 8 POE+ ports.

What Unifi product would be used to extend the wifi range of this router? Assuming I couldn't run ethernet cables to hardwire APs?

If running Ethernet cables to hardwire access points to the Ubiquiti Dream Router 7 is not feasible, you can use a UniFi AP in wireless mesh mode, such as the Ubiquiti U7 Mesh BE5000 Dual-Band Indoor/Outdoor Wi-Fi 7 Access Point.
