What is largest diameter circular collapsible reflector it will hold?
It holds the Westcott Illuminator 48X72 Diffuser when fully extended. So I'd assume it would hold any circular reflector with a 72 diameter.

Can the part that connects to the light stand be moved towards the middle, so the reflector clips are at opposite ends?
No. It's going to be off balance regardless of what you do. Sandbags are impractical. This is a last resort option for holding reflectors...if there is no wind...I adapted my old tripod for a stand which works better, but an assistant is still your best bet.
