Any recommendations on what half bowl to purchase with these sticks?
This tripod is really a 100mm bowl but comes with an adapter to size it down to 75 if needed, so you could go with either size. The 520BALL & 520BALLSH are the 75mm half balls. The 500BALL and 500BALLSH are the 100mm half balls. The ones that end in SH have shorter handles.

Is it possible to use this tripod with a photo head? I'd like to purchase this for both video and photo use. I would use the 504HD for video work, then swap it out for a photo head. Is there any way to adapt this tripod for a photo head? Thank you!
You certainly can use this tripod with a photo head. Since the 536 has a 75mm bowl on top, you will need an adapter. This will adapt from the bowl to a flat base with a 3/8 -16 screw for mounting the photo head. Manfrotto 520BALLSH 75mm Short Half-Ball B&H # MA520BSH.

How low can the legs go off the ground?
You could use the Manfrotto 165 On-Ground Tripod Spreader (B&H #MA165) or a 181 Folding Auto Dolly (B&H #MA181) to get the tripod legs off of the ground.
