In focus mode, is the rocker switch variable speed, or just multi speed? Meaning, does it change focus faster/slower based on how hard you push the rocker, or it is just all on/off based on a few selectable preset focus speeds?
The speed is touch sensitive variable, not set speeds.

No, The Manfrotto Clamp-On Zoom Remote Control will only support Canon, Sony and Panasonic camera models. The best choice for JVC cameras would be the VariZoom VZ-Rock Variable Rocker for LANC Camcorders which has support for JVC's Lanc camera models.

Does this work with the Panasonic AJ-PX230 ?
Unfortunately, no, this remote will not work on Panasonic camcorders even though the physical connector is the same as for other cameras. Panasonic uses a different LANC protocol than Sony or Canon. For this camera, you can use the VariZoom VZRock-PZFI Rocker Controller B&H # VAVZROCKPZFI or the Libec Remote Zoom and Focus Control for Select LANC and Panasonic Cameras B&H # LIZFC5HD. If you wish, there are larger, more professional zoom controls also available.
