You do not need to bounce every time, and if you are in a place with high ceilings you probably don't want to bounce it. If you are shooting in TTL mode you will not need to compensate the flash because the camera and flash will calculate and adjust to the proper output.

Can you store this with it on inside the canon pouches that come with the 600ex-rts? The Sto-Fen one I have is much larger and won't curious if anyone can tell me if the velcro will easily close with it on inside it's pouch.

Yes, They do work well. And no, they don't fall off easily. I have three different brands of these things and these work just as well as any others. They are the perfect low profile diffusion for an on-camera flash.
