I color calibrate my monitors, and I use ICC profiles for my specific printer and paper stock. So why would I use 3rd party ink that can vary in color, or possibly clog my jets? Yes, this has happend too many times, it's not just academic. Anyway, Canon ink is beautiful, always consistent in color, and it's never clogged my printer even after months of not using it. And that's worth paying a bit more.

It is considered water-resistant, but it is not recommended to drop water on the image.

On average, how many 8x10, 4x7, 13x19 prints can I expect to get on a PIXMA Pro-100 printer with this value pack. (I know that it depends on many factors, but I like to get an idea of what my cost of ink would be per print)?

The variables are way too many for any manufacture to give even an estimate on how many prints you get from the ink cartridges. If an image has a lot of white, it will use much less ink then to make the print verses an image that has deep colors. Also some ink is required to prime the ink lines and print heads.

Yes. The CLI inks (I use them in my Canon Pro-100 printer) are dye-based. You can read about them on the Canon site. Also you can search online for dye-based vs pigment-based printer inks.
These CLI inks have worked very well for me - good color and fade resistant. I am confident that those sold by B&H are genuine Canon inks. That is not always the case for the ones sold on other sites even if the package appears to be a legitimate Canon product.
