The Samigon Stainless Steel Dial Thermometer (1-3/4") has a nut at the top of the stem where the dial attaches. The nut can be turned to adjust the position of the needle when using an ice/water bath to measure 32F or 0C degrees.

Can someone tell me how you attach the clamp? the long part that goes in the liquid doesn't fit into the holes on the clamp. Thanks
You pinch together and slide it through, then release and it locks itself into place that way. Don't drill other holes, you'll destroy it.
