Should I go with leather or canvas? Leaving price and weight aside, what could I be overlooking when choosing one fabric over the other? Also, how well does the full leather strap feel in comparison to the seatbelt one from canvas?
It really has to do with the look, honestly. Comfort wise both will be about the same. I actually like the look of the Canvas Models, but most customers go for the Leather. It's really up to your personal taste and interest.

Will this fit my 70-200mm?
Laura, the question is a little vague so here's a few answers, the bag is tall enough to fit the 70-200 f4 IS, and also is deep enough to fit my 100-400L I do not have the 70-200 2.8 but assume if it can fit the 100-400 it can fit that as well.As far as being able to fit the 70-200 mounted I guess depends on what camera body..Also note I am speaking of canon L lenses.

It's actually a little of both. It's a firmer bag, and so holds its shape, but it's lined with canvas and so has some flexibility.
