If your camera has the full frame sensor, given the description of the photographs you intend to take, I would recommend the 90mm. For crop sensor, the 50mm.

I have a question about the manual focus of this lens. Does the manual focus ring have real, physical, hard stops at the close end and the far end of the focus throw? Or, when I turn the focus dial all the way to infinity, will the Dial keep moving if I push past infinity, despite focus of course stopping at infinity? This is a very important detail that I must now to see if it will work with my edelkrone motorized focus which requires physical hard stops. Thank you!
I just double checked mine. This lens has a hard-stop at infinity where the focus ring physically can't move any further. That hard stop may not be exactly at optical infinity focus but somewhere slightly past it, and that can change slightly with ambient air temperature.

What effect on performance would using this on an R5 w/ EF adaptor have, given that it will be further from the sensor?
The Canon TS-E 90mm f/2.8L Macro Tilt-Shift Lens will work perfectly on the Canon R5 with the adapter. There won't be any effect in the performance.
