Always look at the weight the tripod will old and the weight of your camera with its heavest lens. In most cases all APS-Cs with wide angles and zooms, like 24-85... Will all work on almost any full sized tri-pod.

No, you cant replace the head on this tripod.

No, it uses it own kind of quick release system (the plate replacement is Manfrotto 200LT-PL), not arca compatible.
It's possible to replace the head with one that is, but, at this point, you should be looking into buying a separate tripod, head (arca compatible) and assembling - not worth to buy a complete tripod kit like this.
