This cannot, as is, be a true video tripod. The ball head is meant only for holding a camera in one position during exposure. That is termed a lock off in movie terms and if that is what you need, then you are good. However, to be a true video tripod you need the head to be a fluid type so during the take you can smoothly pan and tilt with the subject. To use this column of this tripod at a 90 degree is not difficult, particularly with a Sony A7R IV and the Sony FE 90mm lens.

Is the custom orange Sony plate designed to fit the battery grip, if used, with the a7III or will it only fit the body without grip?

Can I shoot upside down (plang in 90 to the floor) for macro and food?

Yes. Loosen the column lock and gently remove the rubber stopper from the end of the column. Slide the column all the way out and flip it around. Replace the rubber stopper and lock the column in place just like you normally would. I do the a lot for macro shots. A very versatile tripod.
